Chicken Stuffed with Pesto and Fat Free Cream Cheese Recipe

Recipe Ingredients:

2Tablespoons of reduced fat free cream cheese.
1Tablespoon of basil pesto (store-bought or homemade).
Ground pepper to taste.
4Boneless, skinless chicken breasts (1-1 1/4 pounds total).
1Egg white.
½Cup of plain dry breadcrumbs.
2Teaspoons of extra-virgin olive oil.

STEP 1: First, preheat the oven to 400 degrees Fahrenheit.  Then coat a rimmed baking sheet with cooking spray. Combine the fat free cream cheese, pesto, and chili in a small bowl with a fork.

STEP 2: Cut a thin half of a chicken breast into this section by making a horizontal slit along the long edge, roughly in opposite directions. 
Open each breast separately and place one-fourth of the filling in the center. 

STEP 3: Now close the breast over the filling, pressing the edges firmly to seal.  Then repeat with the remaining chicken breasts and filling.
In a medium bowl, lightly beat the egg whites with a fork. 

STEP 4: Take a glass bowl and put the breadcrumbs in it.  Hold each chicken breast half together and dip it in the egg white, then roll the chicken pieces in the breadcrumbs.  (Omit the rest.)

STEP 5: Now heat a large oil in a medium size nonstick wok over high heat. 

STEP 6: Add the chicken breasts to the hot oil and cook until browned on one side, about 2 minutes.  Place the chicken, brown-side up, on the prepared baking sheet and bake until the thickest part of the chicken breast reads 165F. 

STEP 7: About 15-20 minutes depending on the thickness of your chicken. Remove from the oven, and allow resting 5 minutes before serving.
